JAMAICAN SALTFISH CAKE RECIPE

Prepare dried salted codfish by soaking it in cold water overnight to remove excess salt and to rehydrate. Throw off water. Add fresh water and bring to a boil. If codfish is still too salty repeat the boiling process again.

Ingredients

2 cups of deboned and shredded codfish

½ small onion chopped

2 medium scallions chopped

¼ cup flower

1 egg

¼ teaspoon baking powder

½ teaspoon curry

½ teaspoon black pepper

1 teaspoon scotch bonnet sauce or hot pepper sauce

1 teaspoon thyme

Process

Place everything except flour and baking powder in a blender and blend to a fairly smooth consistency. Add a little water if needed.
Pour into large bowl and fold in flour and baking powder in mixture.
Heat a third cup of oil in an iron skillet on medium heat.
Spoon batter into hot oil.
Flatten each with the back of the spoon.
Fry each side until golden brown.
Place on paper towel to remove excess oil
Great as a side dish or for breakfast.
